A few months ago I made these really yummy Fluffer Nutter Cupcakes:
The combination of peanut butter, marshmallow, and chocolate was so yummy that I started playing around with the idea of using those same ingredients in a cookie. I decided on a peanut butter cookie with mini marshmallows mixed in the dough then drizzled with melted chocolate after they were baked. I used my trusty Peanut Butter Cookie recipe and simply mixed in about a cup of marshmallows at the end.
The dough looked promising, but unfortunately the marshmallows did what marshmallows always do when they are heated up...they melted everywhere. Some of the cookies turned out okay, but the majority of them were weird shaped from the marshmallow melting out the sides of the cookie. Plus a lot of them ended up sticking to the pan too because marshmallows are sticky! They still tasted pretty good, but the marshmallow flavor wasn't as strong as I would have liked, and I ended up not even trying the chocolate drizzle because I wasn't happy with the cookies.
So now it's back to the drawing board kitchen to figure out another way to make Fluffer Nutter Cookies work...maybe marshmallow creme instead of the mini marshmallows or maybe some kind of sandwich with two cookies?!?
Have you ever had a cookie {or any kind of recipe} fail in your kitchen?
I love the idea! I have a Mississippi Mud Cookie where I make the dough, scoop it out onto the pan and then press three marshmallows on top of the dough. When the bake they do melt on top (and sometimes slide off), but they do turn out toasted and yummy. You could try that and the drizzle with chocolate.
ReplyDeleteI would do the sandwich with marshmallow creme. I don't cook a lot, but I think that might be your best bet.
ReplyDeleteMy biggest fail?? Brownies made with egg substitute. When Buddy was really allergic to eggs, we had to use an egg substitute in all our baking. It works awesome in chocolate chip cookies and other things, but brownies? Not so much. they they didn't rise, and they were a greasy, hard mess. It was really gross.
I wonder if you could use dried marshmallows like in Lucky Charms.

ReplyDeleteCooking fail..Oh yes! Two times come to mind. Once I attempted to make cake pops...they didn't turn out good at all. In fact they were horrible. My second cooking fail was pumpkin soup. I found a recipe on Allrecipes.com and thought for sure it would be a hit. {we love pumpkin!} Well as I was cooking it, it just started smelling rank. We tasted it and let's just say that we had fast food for dinner that night. And to give you an idea of how bad it was...our dog wouldn't even eat it! To this day we are all terrified to even think about making pumpkin soup again.
I haven't been too adventurous in the kitchen lately :( But I can't wait to hear how you perfect these cookies, because they sound delicious!
ReplyDeleteSo this might be a terrible idea, but what if you somehow incorporated marshmallow fluff into the dough, or maybe made little cookie sandwiches with the fluff inbetween?
ReplyDeleteWhat if you baked the cookie and then when they were almost done put a half of a large marshmallow on top and cooked it the rest of the way and then drizzled with the chocolate? They sound so good, I will have to try them when you get it all worked out.
ReplyDeleteI would make a marshmallow cream filling - like traditional whoopie pie filling - and sandwich them. How you incorporate the chocolate is beyond me though...unless you did some mini chocolate chips in the dough.

ReplyDelete1) baked the cookies (w/out the marshmallows in the dough), cooled the cookies, drizzled with choloclate, and then sprinkled the marshmallows on top (they would stick to the chocolate)
OR
2) baked the cookies, put the marshmallows on top, then drizzle with chocolate - if they come out the way I imagine, you could call them Fluffer Nutter Dreams - yum!!!
Make them like a moon pie. Peanut Butter cookie sandwich with marshmallow fluff center coated in chocolate.
