Dinner and Dessert

My boys {and Jason and I} ate eggplant for the first time this week.And we ate {almost} every bite!
I told the boys it was lasagna....which it sort of is....and they dug right in. Grant cleaned his plate and Henry ate a pretty good size portion too.
Who knew eggplant could be so yummy!



Peanut Butter Cookies

After dinner, the boys helped me make some of my mom's SUPER delicious Peanut Butter cookies. I made the dough, but they helped by rolling out the dough, putting it on the cookie sheet, and using the fork to squish the cookies! They turned out really yummy!

We have Chicken parmesan all the time, but I don't know if I'm brave enough to try eggplant! The corn and cookies look YUMMY, though!

Yum-O!!! I LOVE eggplant. We actually have some growing in our garden. And nothing beats fresh from the farm corn. My father-in-law has a HUGE garden and he grows the best corn I've ever had. He was just telling us yesterday that it's just about ready to be pick. Yayyy!!

So glad you came over today. I was worried about the pool ruining our grass. Maybe I should be more worried about the grass ruining the pool and all my hard work would be for nothing. LOL!!

Yummy! Eggplant parmisian looks delicious and so do the cookies. Corn on the cob is one of favorites. When I was growning up, we had a huge garden and all the fresh vegetables you could eat:) Have a blessed day!

Looks delicious!!! I have never tried eggplant parmesean. Maybe I should cook it some time and see if my boys like it as much as yours did.

That looks so yummy! Peanut butter cookies are one of my favorites!!!! I love how your recipe looks and I've been looking for a new one so I'm going to have to try it out!
