Sweet Potatoes

Lots and lots of sweet potatoes!
I bought this bag of sweet potatoes for $6 from a man selling them on the side of the road last week. I'm guessing there are probably close to 50 sweet potatoes in this brown bag that the man called "the small bag"....he was also selling a larger bag that had twice as many sweet potatoes in it! 

I came home with grand plans to make some yummy baked sweet potatoes and maybe some kind of pie, but my bag of sweet potatoes is still sitting untouched on the kitchen counter. We were out of town most of the weekend, and Jason has been working long hours...or at least those are the excuses that I tell myself when I start feeling bad for not cooking any of them yet:) Another reason I haven't cooked them is because it has been so hot here lately and sweet potatoes just seem like a cold weather kind of food to me. 

Luckily our temps dropped almost 40 degrees overnight on Tuesday and Jason is supposed to have normal work hours for the rest of  the week...so no more excuses! I will make something with {at least a few of} my sweet potatoes, I'm just not sure what!?!

My husband likes them best simply baked. And we love oven-baked sweet potato fries--you cut the sweet potatoes into strips (or "logs," since they can be hard to cut), spread them out on a baking sheet, drizzle with olive oil, sea salt, and any other seasonings you like, and bake. I think I usually bake them at 400 degrees--for 25-30 minutes, maybe? Or until sizzling. Can't quite remember how long that takes.

Of course there are great recipes for mashed sweet potatoes with toppings--we only do that at Thanksgiving! :)

Wowsers Kelli, that is a lot of potatoes! Sweet potato chips, fries, wedges, mashed potatoes. You could make my ever so yummy sweet potato casserole but that is more for Thanksgiving. Richella had a great idea. I would have said, make french fries.

We also like to eat them just like if we were making bake potatoes.

Sweet potato pie?? French fries? I'm sure the boys would LOVE the fries. I know mine do.

My daughter hates white potatoes but loves sweet potatoes! Our go to face lately has been peeled and diced potatoes tossed on a parchment paper covered cookie sheet with 3 slices of bacon diced ( we like to use maple) and salt and pepper. Roast at 400 until the bacon and potatoes are cooked. Half way through I mix them up a bit to get the potatoes lightly coated with bacon.

My family LOVES sweet potatoes. On the spicy side of things we like curried sweet potato soup, and twice baked sweet potatoes stuffed with soyrizo and cheese. Shepherds pie made with sweet potatoes is always fun, and I have a corn chowder recipe that I use half sweet, half russet potatoes for. I even make a sweet n' spicy cheese dip with sweet potatoes. I can't wait to hear what you make.

Sweet potato pie is my favorite and my friend's mom makes the best. If I can dig up her recipe I'll send it your way. Rondell loves sweet potato fries. Hope your week gets smoother.

I love making sweet potato wedges with just a drizzle of olive oil and a sprinkle of cinnamon sugar. The boys love my sweet potato chocolate chip muffins. What a fantastic price on those. Thanks for sharing.

My friend taught me how to make a 'tortilla soup' with them...

4-5 sweet potatoes (or more...I am not a big fan of left-overs); broth to cover them; cook until soft. Then I use my immersion blender (you could mash them...but I like to have some chucks); and add some diced tomatoes (I use the canned variety with garlic, spices etc...); and some fresh cilantro. Serve with tortilla chips and you have a SUPER healthy and fresh hot evening meal. Even my kids love this...

I'm curious to see what you make - for us sweet potatoes are usually roasted baked or mashed and that's about it - I really just love them with a little butter and salt.

what a great deal!!! i've never cooked with sweet potatoes but i LOVE sweet potato french fries!!! i think i'd be making fries every night if i had that many potatoes!! and the fries would be coated in garlic, a little butter and rosemary! num!!

We just had some today! I cut them up in strips, sprinkle a little olive oil and Emeril's Seasoning on them and bake them at 400 for about 20 minutes.

I LOVE sweet potatoes! I love them as french fries and I sprinkle cinnamon and sugar on them.

Ok just to throw something different out there... Might I suggest growing one as part of a science experiment? Slice in half, place skewers at the bottom about 2" from the sliced section, place the sliced section in a jar of water and watch it grow. Nothing different needed, just fresh water and maybe a bigger jar as the roots grow.

My favorite sweet potato dish is the sweet potato casserole that we have every year at thanksgiving. It's full of butter and sugar and is so yummy!

I hadn't thought about sweet potato fries, I'll have to try that!

My girls LOOOVE sweet potatoe fries. Just a little olive oil & some salt & pepper & you are good to go. I found a couple recipes online & I've liked them all.
